Above, the Campanian sun presses down on the vineyard with all the insistence of August. Below, the air is still and cool — held at a constant by the volcanic rock that surrounds the room on every side. The bottles along the walls don’t move. The silence is complete. And the wine, poured into your glass from a vineyard you can still see from the top of the stairs, tastes like something that belongs to this place entirely.
The Caveau at Bosco de’ Medici is our underground tasting room. It was built to do one thing: to create the conditions in which wine can be understood, not just consumed. And it happens to be one of the more unusual rooms you’ll ever sit in — carved into the earth at the foot of Vesuvius, a few minutes from the ruins of Pompeii, in a winery that has been making volcanic wine on this soil for decades.
What the Caveau Is
The Caveau is a private underground tasting space at the heart of the estate. The rock walls maintain a steady temperature year-round — cool and consistent, regardless of the season above. It seats up to eight guests, and every experience held here is private: no shared tables, no other groups.
The experience was designed for people who want more than a quick pour and a label to read. It’s for those who want to understand what it means that these vines grow on volcanic soil, on their own roots, in a landscape that has been shaped by eruptions for two thousand years. And then, naturally, taste the result.
What’s Included
Every Caveau tasting is a private, guided experience led by a dedicated sommelier.
The wines are drawn from our white wine selection, all produced on the estate from indigenous volcanic varieties.
The food accompanies rather than distracts:
- A board of Campanian cured meats and aged cheeses, with pickled vegetables from the estate
- Cuoppo napoletano — the classic Neapolitan street-food cone of mixed fried bites
- Seasonal parmigiana — the layered aubergine dish that is one of the great expressions of southern Italian cooking
The sommelier guides the tasting throughout: the origin of each variety, the volcanic geology that shapes its flavour, the vintage and what the season gave. The experience runs from 11:30 to 15:00.
